Buffalo Chicken Tots Inspired by The Friar's Nook in Magic Kingdom at Walt Disney World

Lazy Sundays call for a big lazy bowl of carbs.

What you'll need:

  • Frozen tots (potato, broccoli, cauliflower - whatever takes your fancy)

  • Roast chicken

  • Buffalo sauce

  • Blue cheese dressing and/or crumbled blue cheese

Instructions:

  1. Cook the tots according to package directions.

  2. Shred ½ to ¾ cups of chicken, depending on how hungry you are, and coat it with buffalo sauce to taste. I like a lot.

    1. If the chicken is cold, nuke it for a minute in the microwave.

    2. Arrange tots in a bowl, top with chicken.

    3. Add blue cheese dressing and/or crumbles to taste.

    4. Take a picture for the 'gram.

There is DEFINITELY a way to make this more fancy but you won't find it here, honey.

Some notes:

I will often buy a plain roast chicken from the prepared foods section at the grocery store (and eat the skin while I'm driving on the way home but I'm gross) - it's such a convenient way to add protein to soups, salads, sandwiches, or grazing plates without having to cook my own. So that's what I'll be using for this "recipe," but you can make the buffalo chicken however you want to.

I'm also using frozen tots because I'm too lazy to make homemade ones - do whatever works best for you.

Lastly, this could easily be made vegan if you use a chicken substitute and vegan dressing!
