Pongu Lumpia Two Ways Inspired by Pandora at Disney's Animal Kingdom
Every time I enter Pandora, I beeline towards Pongu Pongu for that sweet pineapple cream cheese delight. Here's a way to enjoy two Pongu Lumpia-inspired snacks from the comfort of your own home.
You will need:
8 oz cream cheese
¼ cup crushed pineapple + 1 tbsp of pineapple juice
½ teaspoon of sugar for the filling, plus a sprinkle for dusting
12 pre-made wonton wrappers
Water
Cooking spray
(optional) 1 seeded jalapeno (more or less depending on how spicy you like it)
Nonstick baking sheet or baking sheet lined with parchment paper
Makes enough filling for 24-48 wontons, depending on how big your wrappers are and how generously you fill them.
To make the filling (which is going to double as a dip and maybe triple as a bagel spread if you're into that):
Let the cream cheese come to room temperature. (You don't have to, but it'll be easier to mix this way.)
Drain the pineapple into a bowl (or another vessel, but you're going to want to catch the pineapple juice.
Mix together the cream cheese, crushed pineapple, pineapple juice, and sugar (plus jalapeno if you're going that way) until all ingredients are well combined.
Cover the bowl with plastic wrap or a lid and let sit it in the fridge for an hour.
To make the wontons:
Preheat the oven to 400 degrees F.
Spray your baking sheet with cooking spray or line it with parchment paper and take your cream cheese mixture out of the fridge.
Lay wonton wrappers on prepared baking sheet.
Place ½ tablespoon of cream cheese filling in the middle of each wonton.*
One at a time, lightly brush the edges of each wonton with water and fold to make a seal.
If using ROUND wontons, fold in half and crimp along the edge.
If using SQUARE wontons, fold in half diagonally to form a triangle and then fold along the longest edge so that the two corners touch and then pinch them together.
Lightly spray wontons with cooking spray.
(optional) Sprinkle some sugar on each wonton if you've got a sweet tooth.
Bake in the preheated oven until golden and crispy and the cream cheese is melted, about 5-7 minutes.**
* My wonton wrappers are about 3" x 3". I tried one tablespoon and it was just a little too much!
**Oven times and temps vary, so keep an eye on everything so it doesn't burn!
To make wonton chips:
Preheat the oven to 400 degrees F.
Spray a baking sheet with cooking spray or line it with parchment paper.
Cut your pre-made wonton wrappers to size depending on how big you want your chips.
Arrange wonton wrappers on the baking sheet and lightly spray with cooking spray. Sprinkle with salt or sugar depending on what kind of flavor you're looking for.
Place your tray in the oven and cook for 5 minutes.
Remove the tray from the oven, rotate it 180 degrees, and then put it back in, cooking until the chips are golden brown.
Remove from the oven and let cool before eating.
Some thoughts post-baking:
I only had regular granulated sugar for sprinkling, but something with larger crystals would work great and give it a little extra crunch.
If you really want to punch up the pineapple flavor, add another couple of tablespoons of crushed pineapple to the cream cheese. I'm definitely the kind of person who never follows a recipe to the T (which is why I'm terrible at baking from scratch), so play around with it and do what tastes best to you!
You can also definitely air fry or deep fry the filled wontons or chips - it's totally up to you! If you try that, let me know how it goes.
